WHAT DOES SWAN TASTE LIKE? Monic Kim discusses a third explanation of why swan isn’t eaten any more: the theory that swan doesn’t taste good. This post by Adam Roberts on the Amateur Gourmet website gives some responses by readers to the question: “does swan taste good”? ” Roberts says: I received many helpful responses—almost all of which were permutations of ‘no, it doesn’t taste good.’” The adjectives Roberts quotes most are “tough”, “stringy”, and “fishy”. The responses to the Guardian’s query have mixed opinions on the taste of swans, including some recipes. I give the most weight to the opinion of chef Mario Batali (the man who brought Eataly to New York City). Monica Kim quotes him about swan: “delicious — deep red, lean, lightly gamey, moist, and succulent”.
