A SQUIRREL COOK OFF. Ann Zimmerman had an article in the Wall Street Journal (September 9) about a squirrel cook off which is held in Bentonville, Arkansas. The competition had 30 competitors from 9 states. Among the recipes were squirrel with cashews and spring rolls and Caribbean jerk squirrel with fried plantains. The founders of the cook off are seeking to preserve an historically important food. Zimmerman notes that squirrel was “a lifesaver for many destitute families during the Depression”. Says Zimmerman, the founder of the squirrel cook off “has a serious desire to promote squirrel hunting to children and their families.”
