THE DOWNFALL OF THE POTATO. This article reports that new guidelines from the U.S. Department of Agriculture would limit potatoes in school lunches to two servings a week. Senator Collins of Maine is fighting the proposal. I find this ironic. Potatoes have been an important source of nutrition. Some of my ancestors came to this country during the Irish Potato Famine. This article by Professor William H. Mcneill says that: “… in course of the nineteenth century, potatoes displaced [bread] as the principal food for the poorer classes everywhere from Belgium to Russia. Boiled or baked potatoes were cheaper than bread, and just as nutritious.” There was a time when potatoes were valued as nutritious.
