The responses to the Guardian’s query have mixed opinions on the taste of swans, including some recipes. I give the most weight to the opinion of chef Mario Batali (the man who brought Eataly to New York City). Monica Kim quotes him about swan: “delicious — deep red, lean, lightly gamey, moist, and succulent”.
