OUR FAMILY LIKED BUTTER. I like butter, and my family liked butter. Butter was important to my father’s side of the family (Irish) and my mother’s side (Danish). My mother always served eggs for breakfast, and she often poached them. She made an effort to make her meals low on calories to help my father with his weight. Poached eggs should have been low calorie, but my father always put large slabs on butter on them. My mother would watch in dismay.

When we were in college, my brother and I had a number of lunches we made for ourselves which consisted of a sleeve of saltine crackers, buttered.
